So on Sunday evening my son just happened to mention that a Peach Cobbler sounded really good. My reply was, "then you should learn how to make one". (heehee) Besides having dessert in the house is not a good thing, we would just EAT it, and it's not on the Weight Watchers diet!!
Low and behold I was blog hopping later in the week and came across a blog for Gooseberry Patch. These are Ohio girls (just a few miles from our house) who publish all kinds of wonderful cooking and crafting books, and I have several !! Well one of their latest posts was for Peach Cobbler Muffins!! Perfect, One-the boy can learn how to bake, Two-he can take them in his lunch and they won't be around the house for us to EAT.
Thought you all would enjoy the recipe. The boy will be making these later today or tomorrow, LOL.

Peach Cobbler Muffins
3 c. all-purpose flour
1 c. sugar
1-1/2 T. baking soda
1/2 t. salt
3/4 c. butter, diced
1-3/4 c. milk
16-oz. can peaches, drained and chopped
Mix flour, sugar, baking soda and salt in a large bowl. Cut in butter with a pastry knife or a fork. Add milk and peaches; stir just until moistened. Spoon batter into greased or paper-lined muffin cups,
filling 2/3 full. Spoon topping onto muffins. Bake at 400 degrees for about 20 minutes, or until golden. Turn out and cool slightly on a wire rack; serve warm or cold. Makes 1-1/2 dozen.

Hmmmm...your boy must have a different sort of boy blood running through his veins than mine does....He won't come near anything to do with baking or cooking. And even his father - who is an excellent cook - won't touch anything to do with baking. Looks like a great recipe though - definitely going in the "to try" pile. Thanks for sharing!
